This chili variation is good, easy, and will warm you up on a chille day!!! (Get It?) It calls for 3 chicken breast halves, but to speed things up you can get a rotisserie chicken at the store and cut up the breasts for the chili and send the other pieces in lunches the next day! Now that’s a win, win, idea.

White Chicken Chili
Instructions
If using raw chicken: Heat olive oil over medium heat. Cook chicken, onion, and garlic in hot oil until the chicken is browned completely, 3 to 5 minutes.
If using cooked chicken just saute the onion and garlic until soft.
Cut chicken into 1 " pieces. Add to pan with onion and garlic. Add chicken broth, beans, chilies, oregano, cumin, and cayenne pepper. Bring the mixture to a simmer and cook until the chicken is cooked through and all ingredients are hot. 35 to 45 minutes.
Divide into 4 serving bowls and top with shredded cheese and cilantro.
