Vegetable Pizza Salad

This recipe is pretty versatile. I have served it as part of an appetizer party. It can be served on a salad buffet, or I have even served it as the entrée in a light lunch.  It can be very showy so take your time arranging the vegetables.

  1. Arrange cresent rolls on large pizza pan and seal with a rolling pin. Bake in 350 degree oven for 10 to 13 minutes.
  2. Combine softened cream cheese and chives with a mixer. Spread on cooled pizza dough.
  3. Slice tomatoes in thin circle slices and then cut each of the slices in half crosswise to make a semi-circle. Arrange around the edge of the pizza like a pinwheel.
  4. Fill the center of the pizza with remaining chopped vegetables, sliced olives and top with grated cheese. Cut in pizza pie slices to serve.
