This is a very refreshing salad. Papaya slices spark the salad while the seeds flavor the dressing.

Ingredients
- 2 heads romaine lettuce
- 1 head bibb or butter lettuce
- 1 papaya
- 1 large avacado
Papaya Seed Dressing
- 1/2 cup sugar
- 2 teaspoons salt
- 1/2 teaspoon dry mustard
- 1/2 cup white vinegar or rice vinegar
- 1/2 cup vegetable oil
- 1/2 cup chopped onion
- 2 tablespoons fresh papaya seeds

Instructions
- Wash and dry lettuce and tear into bite size pieces.
- Before serving salad, place lettuce in a large bowl. Peel and slice papaya, reserving 2 tablespoons of seeds for dressing Peel and slice avocado. Add papaya and avocado to greens and toss with the salad dressing.
Salad Dressing
- Place all ingredients except papaya seeds into a food processor . Blend; add papaya seeds and process only until they are the size of coarsely ground black pepper. May be refrigerated up to 3 days
