Sugared walnuts are fun and delicious. Put them out in a bowl for holiday snacks or toss them with a variety of salad combinations for a surprise party for your taste buds. They can be kept in the freezer, so they are a good do-ahead for holiday entertaining considering their multiple uses.
Instructions
- In a medium sauce pan with a candy thermometer combine the first 4 ingredients . Bring to a boil over medium high heat and cook until the thermometer reaches 236 degrees. ( soft ball stage)
- Remove from heat and stir in the vanilla. Stir in walnuts until each is coated and then spread out on waxed paper to dry. You need to work fast during this phase or you will have a big clump of walnuts, not easily separated. You can package these and save them in the freezer, or in an air tight container in your pantry if you expect to use them in a couple of weeks.
