Jock and Angie introduced us to this salad. It's very versatile, and I've yet to find anyone that doesn't like it.
You can use either chicken or shrimp, especially if using it as a main course, or without any meat, a great side salad especially for a barbecue or buffet since there are no greens to wilt!

Ingredients
- 6 ounces uncooked soba noodles buckwheat, broken in half no flavor packet
- 1 package slaw mix
- 3/4 cup green onions thinly sliced
- 1/2 pound cooked shrimp/ chopped or 2 cups chopped cooked chicken
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 1 tablespoon salad oil
- 2 1/2 tablespoons creamy peanut butter
- 2 teaspoons Thai chile paste with garlic
- 2 tablespoons chopped peanuts

Instructions
- Cook noodles according to package directions, without seasoning pack. Combine noodles, slaw, 1/2 cup green onion and the shrimp or chicken, if using. Combine soy sauce and next four ingredients (thru chile paste) in a small bowl; stir with whisk until blended. Add soy sauce, toss together with other ingredients. Sprinkle with remaining onions and peanuts.
