Smashed Potatoes
Instructions
Place washed whole potatoes large pan of water and boil for 15 or 20 minutes or until done. Test them by piercing with a fork. Drain and cool slightly.
Spray a broiler pan with non-stick spray. Using the curved back of a fork or a potato masher press down on each potato to crush them. They should break open but not apart too much. Place on broiler pan. Brush with butter/ olive oil mixture.
Place under broiler until tops are golden brown. Serve with your favorite garnishes.
