Shrimp and Mushroom Crepes

This recipe makes a beautiful first course that will set the mood for the repast to follow.  It is also excellent, on its own for a luncheon.  The crepe recipe is found elsewhere on the blog.  They are definetly  the ‘do-ahead’ part of this recipe.  This recipe will absolutely blow your guests skirts up right over their heads!!!!!

Instructions
  1. Saute onions and mushrooms and shrimp in 2 tablespoons of butter.
  2. Make a white sauce using 4 tablespoons of butter, flour, chicken broth, milk, lemon juice.
  3. Add the mushroom, onion, shrimp mix into 3/4 of the sauce. Spread the rest of the sauce in the bottom of a 9x13 baking dish. Fill crepes with shrimp mixture and roll placing seam side down in sauce. Sprinkle with cheeses and dot with butter
  4. Bake uncovered at 375 degrees, 15 to 20 minutes. Two crepes are the usual serving size.
