Ingredients

baguette

ripe tomatoes
cut in 1 inch cubes

English cucumber
sliced 1/2 inch thick

red
bell pepper
seeded and cut in half

yellow
bell pepper
seeded and cut in half

red onion
sliced in 1/3 inch slices

fresh basil leaves
rough chopped

capers
drained
Salad Dressing

teaspoon
garlic
minced
1/2
teaspoon
dijon mustard

tablespoons
Champagne Vinegar

cup
olive oil
1/2
teaspoon
salt

teaspoon
ground pepper
Instructions
Prepare tomatoes, cucumber, place in salad bowl.
Brush peppers and onions with oil and place on grill until just browned.
Slice grilled peppers in 1/2 inch strips and place in salad bowl.
Cut onion slices in half and separate into rings to place in bowl.
Slice baguette in 1/2 inch pieces. Toss in olive oil and then toast on the grill. Put into bowl when toasted.
Salad Dressing
Whisk all ingredients together. Pour over salad. Serve.
