This is a no lettuce salad with grilled vegetables, it also features bites of grilled baguette. You definitely don’t have to worry about it wilting. It’s a perfect side dish for Tuscan Lemon Chicken also found on this site.

Ingredients
- 3 tablespoons olive oil
- 1 2 inch wide baguette
- 1 teaspoon sea salt
- 2 large ripe tomatoes cut in 1 inch cubes
- 1 English cucumber sliced 1/2 inch thick
- 1 red bell pepper seeded and cut in half
- 1 yellow bell pepper seeded and cut in half
- 1/2 red onion sliced in 1/3 inch slices
- 20 fresh basil leaves rough chopped
- 3 tablespoons capers drained
Salad Dressing
- 1 teaspoon garlic minced
- 1/2 teaspoon dijon mustard
- 3 tablespoons Champagne Vinegar
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper

Instructions
- Prepare tomatoes, cucumber, place in salad bowl.
- Brush peppers and onions with oil and place on grill until just browned.
- Slice grilled peppers in 1/2 inch strips and place in salad bowl.
- Cut onion slices in half and separate into rings to place in bowl.
- Slice baguette in 1/2 inch pieces. Toss in olive oil and then toast on the grill. Put into bowl when toasted.
Salad Dressing
- Whisk all ingredients together. Pour over salad. Serve.
