Melon Salad/to croak about!!!

This was first made in May’s cooking class.  We had a ball!!!  Croak, ball? too many puns?  Start with a very familiar melon ball salad and then carve  one of these endearing little frogs (ribbit) and you have a buffet conversation piece for sure!!!

  1. With a melon baller, scoop out meat of all the melons. Its fun to make them different sizes if the tool you are using has two sizes, (most do). Mix in a can of drained pineapple. Add berries if desired, use your imagination and the season as your guide. Just before serving add carbonated beverage and spoon into the carved Amphibian!!!!
  2. Choose a large oval shaped cantaloupe. Lay it on its side with the stem and bloom facing east and west. If needed slice a thin piece of rind from the bottom to stabilize the melon. Starting at one side slice a straight line across the melon from side to side. Starting from the same point carve a rainbow shape line almost 3/4 to the top of the melon. Gently remove the wedge you have just sliced. Using the melon baller scoop out as much as you can for your salad. Finish with a spoon scraping out the rest of the pulp to make room for the salad.
  3. Use the wedge you removed to make the frog legs following the picture. Attaching them together at their joints with toothpicks The eyes are blue berries backed with more rind and attached with tooth picks Fill him up with salad and enjoy. He'll be the talk of the party. Ribbit!!!
