I can’t bake these Lemon Bars without thinking of my dear friends Clint and Jeannie Lemmon. They were a breath of fresh air, as are these bars. If you want light and sweet and fresh bake a pan of lemon bars and share them with someone. (or not!)
Instructions
Heat oven to 350 degrees. Blend flour, butter, and powdered sugar thoroughly. Press evenly into square pan (8x8x2) Bake 20 minutes. Beat rest of ingredients together. Pour over crust and bake 20 to 25 minutes more. Do not overbake. ( The filling puffs during baking but flattens when cooled. )
