This salad tastes good and looks beautiful. It is particularly good for a first course served on individual plates. The vegies should be done ahead of time to marinate, then just top on fresh crisped lettuce and grate blue cheese over the top. The green zucchini and red tomatoes make it particularly appropriate for Christmas.

Ingredients
- 1 medium zuchini sliced thin
- 3 medium tomatoes cut in wedges
- 1 14 ounce can hearts of palm drained, cut crosswise in 1/2 to 1 inch chunks
- 2 ounces blue cheese crumbled
- 2 heads boston or butter lettuce washed and spun in crisper
Dressing
- 2/3 cup salad oil
- 1/4 cup white wine vinegar
- 1 large clove garlic
- 1 teaspoon sugar
- 3/4 teaspoon dry mustard
- 3/4 teaspoon salt
- black pepper to taste
- or substitute Wishbone Italian Dressing for marinade

Instructions
- Place all vegetables, except the lettuce, in a shallow dish. Combine dressing ingredients and pour over vegetables. Cover and chill overnight.
- To serve: Drain vegetables, and spoon over lettuce on individual plates. Top with crumbled blue cheese.
