These tender, crispy treats are a perfect addition to your favorite cup of coffee. They are deceiving, in that you would think they are tricky to make, not so much, with a box of puff pastry and a little butter and sugar you are on your way to baking stardom!

French Palmier Cookies
Instructions
Take puff pastry from the freezer and allow it to thaw completely in the box. Preheat oven to 400 degrees.
Unroll the pastry and flatten on a pastry cloth or work surface. Sprinkle sugar mixture over the pastry and with a rolling pin gently press sugar into pastry, being careful not to adjust the size of the dough.
Start rolling one side of the dough tightly toward the center of the sheet. Start from the other side and roll to the middle. Repeat with second sheet of pastry. Wrap the rolled dough in a plastic sheet and set in the refrigerator for 20 minutes.
Remove pastry from the fridge and cut in 1/4 inch slices. Place on a lined baking sheet. You will probably need to make some adjustments to the cookies to keep them tightly rolled.

Brush the tops lightly with melted butter and another light sprinkling of sugar. Bake for 12 to 15 minutes or until cookies puff up and turn golden brown. Keep and eye on them because they burn easily.
