Filo Triangles

This is a very old recipe.  It appears to be a lot of work, and it is time consuming.  Its’ redeeming factors are that it  is delicious, and they can be done ahead and frozen,  to be baked on the day of your party.  If you are looking for a drop dead appetizer that won’t be served by anyone else you know ,  just serve these delicacies.   There are three different fillings,  one method of making them.  Have fun!

Instructions
  1. To make triangles: Lay 1 sheet of filo on a flat surface. Keep remaining sheets covered with a towel to prevent them from drying out. Brush the sheet with melted butter. Fold in half crosswise. Brush again with butter. Cut lengthwise in equal strips about 2 inches wide.
  2. Place a small amount of filling in a corner of each strip. Fold corner with filling over, enclosing filling and forming a triangle at the top of the strip.
  3. Continue to fold the strip, maintaining triangular shape. Brush top with melted butter. Repeat with remaining filo and filling. Triangles may be refrigerated completely covered overnight or frozen.
  4. Before serving triangles, preheat oven to 400 degrees Lightly butter baking sheets. Place thawed or frozen triangles on baking sheet . Bake 15 to 20 minutes or until golden Serve immediately . Will make about 48 appetizers with each filling.
Meat Filling
  1. In a medium skillet over moderate heat, brown ground meat until crumbly. Add onion and garlic. Stir over medium heat until onion is limp. Pour off any fat. Stir in salt, cinnamon, allspice and pepper. Cool before assembling triangles.
Triple-Cheese Filling
  1. Beat egg in a small bowl. Add cheese and seasonings. Mix well.
  1. Thaw frozen soufflé and spoon small portions on filo to form triangles.
