Cranberry Glazed Pork

I have had this recipe forever. It is a wonderful family dinner recipe but could also
be served for a very special company dinner. It is always a winner. It is written for
a pork loin roast but is very complementary to nice little pork tenderloin. Delicious
sides are sweet potatoes, and braised red cabbage. Once you try this it will be in your
“what’s good for company” arsenal for sure.

  1. Rub roast with salt. Place on a rack in a pan. Roast in a 325 degree oven for 2 1/2 to 3 hours.
  2. Prepare glaze in a small sauce pan. Combine cranberries, bar-b-cue sauce, and apple juice. Add the corn starch that has been dissolved in cold water. Cook and stir until thickened. About 5 minutes. Spoon over the pork the last 45 minutes of roasting. Remove roast from oven and skim juices from roast into sauce. Pass with roast to add on sweet potatoes .
