Ingredients
- 1 can black beans drained
- 1 small can shoepeg corn drained (sometimes found in Hispanic food section of store)
- 1 can black eyed peas drained
- 2 avacados diced
- 1/4 cup green onion thinly sliced
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon salt
- tobasco sauce to taste
- fresh cilantro leaves for garnish

- Mix all ingredients. If doing the night before your party don't add the avocado or cilantro until just before serving.
