Slice the zucchini into baking pan. (you will need a lot because it shrinks as it cooks). Stir in rest of the ingredients except the cheese. Top with a good layer of grated cheese. Bake at 350 degrees for 45 minutes to and hour, Until cheese is melted and zucchini is cooked.
