This salad tastes good and looks beautiful. It is particularly good for a first course served on individual plates. The vegies should be done ahead of time to marinate, then just top on fresh crisped lettuce and grate blue cheese over the top. The green zucchini and red tomatoes make it particularly appropriate for Christmas.
