Jeff’s Great 4th of July Pig Roast

Just another McGowan celebration for the record books!!!  You have to know by now that we love a party,  exceptional food,  great settings, tremendous friends and family,  mix well and you have a party,  add a roast pig and now you have a PARTEEEE!!!!  I was privileged to ride along and document the event.  What fun!  Following you will see my attempt at covering the spectacle  through pictures and captions.  It is a two day procedure that involves lots of planning, studying of techniques, special equipment, a strong back, a good sense of humor and a desire to treat a group of hungry people with the best pork on the face of the earth.  Jeff did all of that and then some!  Just follow along  to join in the fun…

Next comes a lot of maneuvering and trimming and preparation you would probably rather not see.  The pig spends the night in a brine of salted ice water, getting ready for the next day.

The next morning, after being injected with pineapple juice the pig is slipped into the cooker and liberally sprinkled with rub.

Now its down to the lakeside to get the cooking done.

Now light it up for 6 hours of roasting...

And the waiting begins, is it done yet ? is it done yet? how long can 6 hours be?   The anticipation is building, Jeff is checking the thermometer, ( on his IPhone) are you sure it’s not done yet?   Like a fine wine there is and exact moment when Jeff says “It’s done!” 

Finally it's done, and what a golden beauty it is. All ready for the carving.

Now Jeff and his lovely assistant, Karli get to work.  Look at them go!  Karli is the master of the shredding forks,  Jeff cuts up

the pieces for her to work with.  We are all standing around being handed succulent bites of meat here and there.  Its like the thanksgiving turkey ritual on steroids!! Absolutely, positively, the best pork ever tasted.  What fun, lets do it again next year!!!!!
