When J.D. comes the adventures begin! First there is fishing, then some more fishing, and well you guessed it, why else would you come to Moses Lake if you didn’t fish!
The other reason he comes, of course is to see family, and cook!!……fish!!!!!! Since he lives on a sailboat in a marina in Tacoma, sometimes he brings seafood with him to cook. He’s come in with an ice chest of crab he just trapped and sets up his propane burner and 12 quart pot and cooks fresh crab for us on the back patio. After hauling in the above catch, you can bet we had delicious fish and chips J.D. style. That means instead of batter fried, the fish pieces are dipped in egg and then Ritz cracker crumbs before frying. Also we had sweet potato fries since we prefer the golden tuber to the starchy white potatoes. What a treat!!! This trip we’ve tried three very delicious, non fish, creations. The first was a grilled chicken breast sandwich. He started with a chicken breast seasoned with Montreal Seasoning and cooked on the grill. The sandwich was assembled with a secret peanut butter/maple syrup/ olive oil sauce, and pepper jelly is spread on the toasted marble rye bread he brought from Tacoma. Mmmm, Mmmmm, good! It was so good, I ate half of it before I remembered to take a picture!
His next creations was one of the best burgers I’ve ever eaten. A hamburger is one of my favorite foods, so that isn’t easy to do. It started with a patty mixed with some onion soup mix and garlic. After it’s shaped it is topped with Montreal seasoning and grilled. In the meantime a thick slice of juicy tomato is topped with cheddar cheese and strips of julienned ham. This is also put on the grill for the cheese to melt and the ham to crisp up a little. When the grill work is complete it is assembled with the usual burger accompaniments and served on a Dutch Crunch roll that he has brought from one of his favorite stores in Tacoma. Wowzer!!!!!!
It took me a few days to be able to eat again after that, but then, out came the Ritz cracker crumbs again. This time the were used to dredge chicken tenders that had been dipped in and egg wash. They were fried until crisp and sliced into bite size pieces. The Caesar Salad was ready to go. Romaine lettuce, avocado, croutons, Caesar Dressing, the chicken tenders , and then topped with his secret ingredient Tiger Sauce. A few drops sprinkled on top of the salad gives just the right amount of zest to start a taste party in your mouth! He did it again! So there you are, a profile of a few days with J.D. What fun!
