Spinach/ Cantaloupe Salad

Prep time: 15 minutes

This is a perfect summer salad.  Refreshing,  and the spinach and sweet ripe cantaloupe really complement each other.

Ingredients

Spinach

Cantaloupe

Toasted Pecans  (or other favorite toasted nut)

Crisp Bacon

Dressing

2 tablespoons honey

3 tablespoons rice vinegar

1/4 cup walnut oil (or a good olive oil)

salt and pepper

2 tablespoons water

lime juice (to taste)

Judge  the quantity of your salad ingredients according to the number of people you are serving.  One batch of the dressing recipe will handle a large bowl of salad.  If you are making a smaller salad it can be saved in the refrigerator for up to two weeks.  If it’s summer, and it’s hot, you won’t have any trouble using it again! Enjoy, and be refreshed.
