Slaw with Peas and Peanuts

Prep time: 20 minutes    Difficulty:    Serves 8

This old-fashioned salad uses a creamy dressing to bind bright green peas, honey roasted

peanuts,  and shredded cabbage.  A little variety to a bar-b- cue stand by.

Slaw

1 package (10 oz.) frozen petite peas

2 cups finely shredded green cabbage

3 green onions sliced thin

1 cup honey roasted peanuts

Dressing

1/4 cup mayonnaise

1/4 cup sour cream

1 Tablespoon white wine vinegar

1 teaspoon Dijon mustard

1/4 teaspoon curry powder

In a large bowl, combine peas, cabbage, and onions  Set aside.  In a small bowl, blend sour cream, mayonnaise, vinegar, mustard and curry powder.  If made ahead, cover and chill for up to a day.

Stir dressing ingredients together, and if not using immediately cover and store for up to a day.

Just before serving toss slaw and dressing and stir in the peanuts.
