Shrimp Crepe

Here’s your chance to use the outstanding crepe recipe found on the blog.

This is a great first course for a special  dinner, or can be used as a nice lunch entrée.

It is also delicious if you want to use half and half crab and shrimp. Go ahead, knock your guests’ socks off!!!

Prep time: 30 minutes  Cook time: 15 minutes  Difficulty     Serves: 8

6 Tablespoons butter

1/4 cup chopped onions or shallots

1/2 pound mushrooms,  chopped

1/4 cup flour

2 cups chicken broth

1 cup canned milk

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon lemon juice

1 pound shrimp

1/2 cup parmesan cheese, grated

1/2 cup swiss  cheese, grated

3 Tablespoons margarine

Melt butter, saute onions, mushrooms ,  when softened add flour and make a  white sauce using the next 5 ingredients.    Combine 3/4 cup sauce and shrimp. Pour remaining sauce in bottom of a 9×13 baking dish .  Spoon a portion of the shrimp mixture on a crepe, roll up and  place in baking dish seam side down    Sprinkle with cheese and dot with butter

Bake at 375  for 15 minutes or until lightly browned.  Serve 2 per person as an entrée, one is probably right for an appetizer course.
