Quinoa Salad with Black Beans

Prep time: 20 minutes  Cook time:  cook quinoa a day ahead according to package directions.  Difficulty:        Serves: 4

This is a great main dish salad.  It is full of protein even though it is meatless.

Great diet fare!

Salad

2 cups quinoa, cooked

1  1/2 cups black beans, cooked

1 mango

1/2 bell pepper

2 scallions

Dressing

1 lemon, zest only

3 tablespoons lemon juice

5 tablespoons olive oil

Salt

Chop the mango, pepper and scallions. Combine cooked quinoa  and black beans in a bowl and mix. Add the rest of the ingredients and mix until thoroughly combined.

Mix  dressing ingredients in a blender or food processor .

Stir dressing into salad and enjoy a healthy lunch or dinner!!!!
