This is Grandma Sutherland’s recipe. It went to many Country Club parties.
This recipe is easily doubled , etc. depending on the size of your crowd.
I have used it a lot and love it. You can leave the peel on the red potatoes for a little more color. Cook’s choice.
Prep time: 1 hour Refrigerate minimum time: 2 hours Difficulty: Servings 8
1/4 cup Italian Salad Dressing, such as Newman’s
6 red, new potatoes, boiled with skin on then cubed, peeling optional
1 cup chopped celery
1/4 cup chopped onion
4 hard-cooked eggs
1 teaspoon salt
1/2 cup mayonnaise
1 teaspoon celery salt
Pour salad dressing over cooked and cubed potatoes and chill at least two hours, or overnight. Add the rest of the ingredients and mix carefully with the mayonnaise. refrigerate another 4 hours. Stir and taste before serving, may need some additional mayonnaise.
Great do-ahead dish for a bar-b-cue crowd!
