Meatball Medley

This appetizer is a real family favorite! It’s fun to bring, fun to serve, and delicious to eat!!

Prep time: Start a day  ahead, it needs to marinate  Difficulty:    Serves 20

3 lbs. meatballs , uncooked

1 cup soy sauce

1/2 cup water

2 tablespoons grated fresh ginger

6 cloves garlic

Combine above ingredients in a roasting pan or 9×11 baking dish.  Bake at 275 for one hour.

Drain

Add:

1 lb. cocktail wieners

2 t0 3 large mushrooms per person, sautéed until golden, and drained on paper towel

2 cans black olives, pitted

large jar of queen size green olives

2 jars Catalina salad dressing

Marinate for 24 hours

Warm in 300 degree oven or croc pot on low setting, until heated through  (one hour in the oven, several hours in a crockpot).  Drain or ladle off excess juices before serving .  Serve in a chafing dish next to a container of toothpicks so guests can choose what they want to eat.
